Vegan Chai Latte

Working in the natural foods industry, I bump into a lot of folks who know their way around the kitchen & love to share their ideas. Lucky for me, I get the inspiration to test out new things in the kitchen quite often! Recently, one of my friends who works at the Whole Foods up in Fort Collins shared her chai latte recipe with me. I put a spin of my own on it, making it vegan, along with adding nutmeg & vanilla. Check it out for yourself! The following serving makes about 2 cups.


Ingredients

  • 1 cup water

  • 1 cup oat milk - I also love cashew for chai, but use your favorite - almond, coconut, etc.!

  • 1/4 tsp ground clove - my friend crushes 6 whole cloves by hand

  • 1/4 tsp ground cardamom - my friend grinds 6 cardamom seeds

  • 1/2 tsp cinnamon - my friend smashes 1 cinnamon stick

  • a pinch or 2 of ginger - I liked to use fresh ginger!

  • a pinch of cracked black pepper

  • 2 tbsp loose leaf black tea - I've used Early Grey Tea before & it's quite tasty too!

  • honey to taste - you can use any other sweetener: monk fruit, coconut sugar, maple syrup, etc.

  • optional: pinch of nutmeg & 1/4 tsp vanilla

The Process

  • Combine all ingredients except for the sweetener into a sauce pan & turn the heat to medium - stir.

  • Once the chai mixture starts to show the first bubbles, turn the heat down, add your sweetener of choice, & let the mixture simmer for about 5-10 minutes.

  • Continue to stir.

  • Strain & serve!


And, a tip from me to you - it's fun to garnish with a cinnamon stick or star anise. I always love a dash more of cinnamon & coconut sugar too. Enjoy & stay warm!
