Cottage Pie

Try my traditional (gluten free) cottage pie recipe, made with help from my Irish ancestors. Sensational, oh so savory, & made with a lot of love!

Ingredients

  • 4 Yukon gold potatoes (or Russet)

  • 2-3 chopped carrots

  • 3 tbsp Kerrygold Garlic Herb Butter - of course, you're welcome to use whatever butter you like!

  • (1) 15 oz. can organic peas (or chopped stems of broccolini bunch) - my husband loathes peas, so I've made it with broccolini stems instead & he did like it better!

  • 1/2 sweet onion

  • 2 tsp tomato paste

  • 32 oz. organic beef broth

  • 2 tbsp chickpea flour

  • 1 lb. organic ground beef

  • Celtic sea salt

  • thyme - optional: rosemary

  • 5 tbsp Kerrygold Garlic Herb Butter

  • 5+ cloves minced garlic

The Process

  • start by boiling your Yukon gold potatoes for about 35 minutes

  • while the potatoes are boiling, sauté your mixture of carrots, onion, & peas with 3 tbsp of butter on medium heat for about 3-5 minutes

  • next, turn heat to low & let veggies simmer for 10-15 minutes

  • once veggies are soft, stir in 2 tsp tomato paste & cook for 1 minute

  • add 1.5 cups organic beef broth to your veggie mixture - turn heat up to medium & let simmer for 5 minutes

  • turn heat back down to low & add 2 tbsp chickpea flour

  • mix the chickpea flour in well for 3 minutes then turn back up to medium heat & add ground beef

  • cook the ground beef until browned & then add sea salt & thyme

  • mix everything together then turn off the heat & cover, if beef & veg are done before the potatoes

  • preheat oven to 350 degrees Fahrenheit


Once the potatoes are boiled, peel them

  • next, mash or whip the potatoes with 5 tbsp melted butter

  • once butter is mixed in, add 1/4 cup beef broth, minced garlic, sea salt, thyme, & rosemary


Once all steps above are complete, layer your cottage pie!

  • pour beef/veggie mixture in pan

  • top with your mashed potatoes

  • optional: top mashed potatoes with shredded Kerrygold Cheese

  • bake for 35 minutes
