Tomato Shishito Soup

It's my favorite time of year - soup season! This is a new soup I created with my farmers market bounty & the abundance of tomatoes from my garden. Nothing beats local produce, especially if you grow it yourself! By supporting sustainable local farmers, you're supporting your local ecosystem, economy, the environment, not to mention you're getting tastier, more nutritional produce to boot! Ingredients
4 cups chopped tomatoes
1 1/3 cup chopped shishito peppers
1/4 yellow onion, chopped
4-6 cloves crushed garlic
1/6 cup avocado oil
32 oz. chicken broth
1 sprig sage - chop leaves
5 sprigs thyme
3 bay leaves
a few pinches Celtic sea salt
cracked black pepper
optional: top with fresh basil & grated Parmesan

The Process
cook onion, tomatoes, peppers, garlic with avocado oil on medium heat for 20 minutes
after 20 minutes, turn heat to low & add 16 oz. chicken broth, along with chopped sage, bay leaves, sprigs thyme, Celtic sea salt, & cracked black pepper - cover & let simmer for 45 minutes
after 45 minutes, purée everything in a food processor then return to the soup pan
once everything is returned to the soup pan, add 16 oz. more chicken broth & 1/4 lemon squeezed juice - cook on low for 20 more minutes
serve once it's cooled enough to eat!
