Peanut Butter Banana Muffins

Getting ready for the arrival of our baby boy, creating freezer meals, sparked the idea for these delicious Peanut Butter Banana Muffins. A simple recipe that is gluten free, dairy free, & vegan! These little bites make a great on-the-go breakfast, or a healthier dessert option.

Ingredients
1.5 brown bananas - best if frozen & then defrosted
2 tsp vanilla
3 tbsp peanut butter
1/4 cup maple syrup
2/3 cup unsweetened almond milk
1/2 tsp cinnamon
1/2 tsp nutmeg
sprinkle sea salt
2 tbsp flax seeds
3/4 cup gluten free all-purpose flour
1 cup blanched almond flour
2 tsp aluminum-free baking soda
1/2 cup chocolate chips - I like Enjoy Life ricemilk chocolate chips!

The Process
preheat oven to 350 degrees Fahrenheit
mix together your wet ingredients in a bowl - banana, vanilla, peanut butter, maple syrup, almond milk
once your wet ingredients are well-mixed, add in the cinnamon. sea salt, nutmeg, & flax seeds
once the spices are mixed in, add in your dry ingredients - blanched almond flour, all-purpose flour, baking soda
once the flour is well-mixed into a batter, sprinkle in your chocolate chips
place your baking cups in your cupcake tin, & pour in the batter - makes 12 muffins
place in the oven for 30 minutes
let cool & enjoy!
