Herbed Honey Nut Squash

My Herbed Honey Nut Squash recipe is the perfect dish for two this harvest season! Serve it on its own for a lighter dinner, or have it as a side with some steak & broccolini like I did. Let me know what you think in the comments below!

Ingredients

  • 4 oz. goat cheese

  • 1 honey nut squash, cut in half

  • pecans

  • minced garlic

  • olive oil

  • sea salt

  • garlic powder

  • onion powder

  • cracked black pepper

  • dried rosemary

  • dried sage

  • optional: top with fresh basil or pesto*


The Process

  • preheat oven to 400 degrees Fahrenheit

  • don't forget to de-seed the squash before adding everything in!

  • rub squash in olive oil & sprinkle some sea salt on each half

  • bake for 50 minutes

  • while your squash is baking, mix 2-4 oz. goat cheese with cracked pepper, rosemary, sage, onion powder & garlic powder - place in the fridge once everything is whipped together

  • pull out the squash once it has baked for 50 minutes & sprinkle some minced garlic on each half

  • next, add dollops of the goat cheese herb spread onto each half

  • top with pecans, sea salt, & olive oil drizzle

  • bake for an additional 10-15 minutes

  • once you've removed your squash from the oven, let cool for 5 minutes, top with fresh herbs, then enjoy!
