Herbed Honey Nut Squash

My Herbed Honey Nut Squash recipe is the perfect dish for two this harvest season! Serve it on its own for a lighter dinner, or have it as a side with some steak & broccolini like I did. Let me know what you think in the comments below!

Ingredients
4 oz. goat cheese
1 honey nut squash, cut in half
pecans
minced garlic
olive oil
sea salt
garlic powder
onion powder
cracked black pepper
dried rosemary
dried sage
optional: top with fresh basil or pesto*
The Process
preheat oven to 400 degrees Fahrenheit
don't forget to de-seed the squash before adding everything in!
rub squash in olive oil & sprinkle some sea salt on each half
bake for 50 minutes
while your squash is baking, mix 2-4 oz. goat cheese with cracked pepper, rosemary, sage, onion powder & garlic powder - place in the fridge once everything is whipped together
pull out the squash once it has baked for 50 minutes & sprinkle some minced garlic on each half
next, add dollops of the goat cheese herb spread onto each half
top with pecans, sea salt, & olive oil drizzle
bake for an additional 10-15 minutes
once you've removed your squash from the oven, let cool for 5 minutes, top with fresh herbs, then enjoy!
