Taco Soup, Bronny Style!

My brother & I loved when my mom would make us this stew growing up! It's like a zesty taco-style spin on chili. Throughout the years, I've put my own (spicier) spin on Taco Soup, & have made some exchanges for cleaner ingredients like the Siete seasoning! Check it out for yourself...

Ingredients

  • 2 cans diced green chiles (7oz)

  • 1 can red kidney beans (29oz)

  • 1 can crushed fire roasted tomatoes (28oz)

  • 1 can chili beans (15oz)

  • 1 jar nacho-sliced jalapenos (12oz)

  • 2 cans whole kernel corn (15oz)

  • 2 packets (Siete) taco seasoning

  • 1 chopped onion

  • 2 pounds ground beef


The Process

  • Toss all of your ingredients into your 8 quart crock pot - as long as I keep the ingredients organic, I don't drain the juices from the beans/corn/peppers.

  • Mix all of your ingredients up & cook on low for 8-10 hours - stir every once in a while.

  • Once the 8 hours is up, enjoy your Taco Soup with friends & family!

Top your soup with tortilla chips, cheese, sour cream, guacamole, salsa, cilantro, whatever you'd like! As you can see (photo on the left), I still make Taco Soup for my brother when he comes up to visit, just gotta bring down the heat for the little guy.
