Pesto Chicken Salad

Try this super simple, delicious Pesto Chicken Salad this summer for the perfect lunch or dinner! Ideally, I would have added some roasted red peppers or bell peppers into this salad, & maybe even a little burrata, but work with what you got. Recipe below (makes 1 serving)!

Ingredients

  • pesto - try my homemade pesto recipe!

  • big handful mixed greens

  • small handful mixed microgreens

  • half a mini English cucumber, cut into fourths

  • 2-4 tbsp chopped red onion

  • olive oil

  • cracked black pepper

  • pine nuts

  • grated Parmesan

  • optional: balsamic glaze


The Process

  • If you don't have any grilled chicken meal prepped, grill that up first! You can always do pan fried, if you don't feel like firing up the grill.

  • Make your pesto next! Fresh pesto is a million times better than store bought. Try my easy pesto recipe for yourself!

  • Rinse & dry your greens & microgreens - my favorite CO local brand is Simply Fresh Microgreens.

  • Fill your plate or bowl with the mixed greens & top with the microgreens - I like a rainbow mix, but use what is available to you. Local is best & will typically last longer!

  • Sprinkle the cucumber & red onion over your greens.

  • Layer on your grilled chicken 1-2 slices (about 1 cup).

  • Dollop on that pesto - I load it up because I'm obsessed with pesto!

  • Sprinkle on the pine nuts, about 1-2 tbsp, for some crunch!

  • Top with cracked black pepper, grated Parmesan, olive oil drizzle, & optional balsamic glaze drizzle.

  • Sliced heirloom tomatoes taste great with this salad as well, I just don't like the sogginess that tomatoes bring to a salad.
