Chicken Taco Soup

One of my new favorite recipes!! You may have tried my original Taco Soup recipe, but this Chicken Taco Soup recipe is even better! My brother agrees, & Taco Soup has been one of his favorite meals since my mom used to make it for us growing up. Try out this new take on Taco Soup below:

Ingredients

  • 2 lbs. chicken - about 4 thighs

  • 4 cups water

  • 20 oz. can crushed fire roasted tomatoes

  • (2) 4 oz. cans green chilies

  • 15 oz. can chili beans

  • 15 oz. can kidney beans

  • 1 chopped sweet yellow onion

  • 6 chopped cloves garlic

  • (1) 1.5 oz. carnitas seasoning packet - I like Siete

  • (1) 1.5 oz. taco seasoning packet - I like Siete or Simply Organics

  • top with avocado & cilantro

  • optional: tortilla or plantain chips

The Process

  • in a big stock pot, boil chicken in 4 cups water for 20-25 minutes

  • remove the chicken from the pot (leave juices) & shred

  • once the chicken is shredded, return it to the pot

  • add the following ingredients in with your shredded chicken (+ juices): fire roasted tomatoes, green chilies, chili beans, kidney beans, onion, & garlic

  • stir everything together over medium heat

  • once the ingredients are mixed together, stir in your seasoning packets

  • cook everything together on medium heat for about 25-30 minutes

  • after 25-30 minutes, turn the heat to low, cover your pot & let simmer for 2 hours - stir occasionally

  • once the 2 hours are up, serve with fresh avocado & cilantro! Tortilla or plantain chips make a great addition as well!
