Sesame Carrot Salad

I've been loving this Sesame Carrot Salad with cooling cucumber as the months get warmer. It's refreshing, savory, & delicious! Get my super simple recipe below.

Ingredients
4 large carrots, peeled
2 large cucumbers, peeled
1/4 cup chopped chives or scallions
2 sliced serrano peppers (optional)
2 minced garlic cloves
small node of shredded ginger
2 tbsp sesame seeds
2 tbsp coconut aminos
2 tbsp rice vinegar
2 tbsp sesame oil
1-2 tbsp kelp granules
The Process
peel carrots, chop chives, slice peppers, minced garlic, shred ginger - toss everything in a large bowl
pour the rest of your ingredients into the large bowl
toss everything together really well
you can serve right away, but I think it's even tastier if you cover & let marinade in the fridge for a couple of hours or overnight!
Enjoy by itself, as a side, or bring to a potluck!
