Cilantro Lime Bean Salad

Before the summer ends & we start heading into cooler months, I wanted to share my refreshing Cilantro Lime Bean Salad recipe. It’s zesty, packed with nutrients, & makes a nice side or pot-luck dish for any evening. Try it out for yourself!

Ingredients

  • 1 can (1.5 cups) black beans

  • 1 can (1.5 cups) garbanzo beans

  • 1 can (1.5 cups) corn

  • 1 bunch cilantro

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1 tsp pepper

  • 3 cloves minced fresh garlic

  • 1 half chopped red onion


The Process

  • rinse & strain beans & corn then pour into a large mixing bowl

  • chop garlic, onion, & cilantro then stir into the mixing bowl with beans & corn

  • sprinkle in seasonings: Chili Lime, garlic powder, salt, & pepper

  • ready to eat or chill for later!
