My husband, Brad, shared his affinity for ceviche with me long ago, & I've been a big fan ever since! We both love ceviche so much that I actually created this scrumptious little appetizer for Brad's birthday! Try these Halibut Ceviche Bites for yourself - inspired by my amazing friend, Denise's recipe.

Ingredients
1 lb. halibut
juice of 1 lime
half chopped medium tomato
1 minced jalapeño
2-3 cloves minced garlic
quarter minced red onion
1 English cucumber
sea salt
top with fresh cilantro + avocado
The Process
rinse off your halibut to remove any remaining bones
pat down halibut with a clean paper towel
chop up your halibut, jalapeño, tomato, onion, garlic, & place them in a glass mixing bowl or dish
add lime juice & sea salt to your glass mixing bowl of ingredients - stir together!
place in the fridge & let "cook" in the juices for 3-4 hours
when the ceviche is about to be ready, slice your cucumber the diagonal way, in order to make them a little longer to hold the ceviche
once the ceviche is ready, top your fresh cucumber slices with little spoonfuls of ceviche
top each bite with a dollop of avocado & sprinkle of fresh cilantro
serve fresh!
Skip the chip with these cute little cucumber bites! Or, feel free to serve with tortilla or plantain chips if you want an added crunch. I've also made this with shrimp, & it is quite tasty. Enjoy!
