Salmon Pesto Bowl

Do you love salmon? I sure do! I could eat it for breakfast, lunch & dinner, & that's exactly what I do with this salmon pesto bowl! Packed with healthy fats & greens, this bowl is the perfect meal to either start your day or spruce up your evening. Let me know what you think!

Ingredients

  • 2 ounces grilled or pan-fried salmon

  • 1/2 cup arugula

  • 1/2 cup broccoli microgreens

  • 1/4 cup sauerkraut

  • 3 tbsp pesto - check out my pesto recipe (vegan recipe coming soon!)

  • 1/4 avocado

  • 1/4 lemon

  • 1 tbsp ghee

  • 1 tsp "Everything but the Bagel" seasoning - Trader Joe's has the classic seasoning, but Natural Grocers has a bigger bag of "Everything" seasoning that's a bigger bang for your buck!


Double the recipe if you're making this for 2 people!


The Process

  • squeeze the lemon* onto your salmon & then season the salmon with the "Everything" seasoning

  • turn the stove top up to medium-high, & place the dollop of ghee in a frying pan & allow it to melt

  • next, let your salmon sizzle in the pan & cook on medium to medium-low for about 10-15 minutes, depending on how well-done you like your salmon

  • while your salmon is cooking, get your bowl ready with the arugula, microgreens, sauerkraut, avocado, & pesto

  • top your veggie bowl with the salmon & you're ready to enjoy your meal!
