Try this easy one-pot chicken & squash meal anytime of year, but I especially love it in the summer when I can get the veggies fresh at the farmers market!

Ingredients
1 lb. chicken breast
1/2 red onion
1 zucchini
1 yellow squash
3 jalapeños
2 tbsp avocado oil - can swap for butter, ghee, or coconut oil
3 tbsp water
2 tsp cracked black pepper
1 tbsp crushed coriander
1 tbsp paprika
2 tbsp dried cilantro
2 tbsp dried parsley
1 tbsp garlic powder
4 cups chicken broth
1 1/4 cup rice
lime juice
sea salt - I always leave the amount of salt up to you, everyone is different!
top with fresh cilantro & more jalapeños & avocado
The Process
cook chicken on medium/medium low for about 15 minutes - add avocado oil, sea salt, 3 tbsp water
after 15 minutes, add vegetables: red onion, zucchini, yellow summer squash, jalapeños
cook veggies mixed with chicken on medium low/low heat for 10-12 minutes
turn heat to low & add 2 cups chicken broth, rice, & herbs (garlic powder, crushed coriander, dried parsley, dried cilantro, cracked black pepper, sea salt, paprika)
mix the rice up with veggies & chicken - cook covered for 20 minutes on medium/medium low
after 20 minutes, add half lime juice + 2 remaining cups of chicken broth
mix everything together with chicken, cover & cook on low for 10-15 minutes
Enjoy with a margarita or my Nojito Mocktail recipe!
