One-Pot Chicken & Squash

Try this easy one-pot chicken & squash meal anytime of year, but I especially love it in the summer when I can get the veggies fresh at the farmers market!

Ingredients

  • 1 lb. chicken breast

  • 1/2 red onion

  • 1 zucchini

  • 1 yellow squash

  • 3 jalapeños

  • 2 tbsp avocado oil - can swap for butter, ghee, or coconut oil

  • 3 tbsp water

  • 2 tsp cracked black pepper

  • 1 tbsp crushed coriander

  • 1 tbsp paprika

  • 2 tbsp dried cilantro

  • 2 tbsp dried parsley

  • 1 tbsp garlic powder

  • 4 cups chicken broth

  • 1 1/4 cup rice

  • lime juice

  • sea salt - I always leave the amount of salt up to you, everyone is different!

  • top with fresh cilantro & more jalapeños & avocado


The Process

  • cook chicken on medium/medium low for about 15 minutes - add avocado oil, sea salt, 3 tbsp water 

  • after 15 minutes, add vegetables: red onion, zucchini, yellow summer squash, jalapeños

  • cook veggies mixed with chicken on medium low/low heat for 10-12 minutes

  • turn heat to low & add 2 cups chicken broth, rice, & herbs (garlic powder, crushed coriander, dried parsley, dried cilantro, cracked black pepper, sea salt, paprika)

  • mix the rice up with veggies & chicken - cook covered for 20 minutes on medium/medium low 

  • after 20 minutes, add half lime juice + 2 remaining cups of chicken broth

  • mix everything together with chicken, cover & cook on low for 10-15 minutes
