cottage cheesecake balls

Cheesecake was a craving of mine during my pregnancy, so I decided to make it healthier, protein packed, & just as delicious with cottage cheese! Did you know that it's best to eat your sugar with protein to help with sugar spikes? Plus, magnesium from pure cocoa powder & swapping cane sugar for pure maple syrup make it a healthier option. Try my Cottage Cheesecake Balls for yourself!

Ingredients

  • 16 oz. cottage cheese

  • 1/2 cup + 2 tbsp Cocoa powder

  • 1/3 cup maple syrup

  • gluten free graham crackers - I like the Scottish Nairns

The Process

  • first, blend the cottage cheese up in a blender or food processor

  • mix your whipped up cottage cheese with the cocoa powder & maple syrup

  • once the cottage cheese, maple syrup, & cocoa powder are well blended together, add 2-3 crushed graham crackers into that batter & mix them in

  • once everything is mixed together, start rolling the mixture into balls (or blobs lol)

  • once you have your balls/blobs molded, crush 2 more packets of Nairns (6 grahams total), & roll the cottage cheesecake balls in the crushed graham crackers so they're coated in grahams

  • refrigerate for 30+ minutes & serve!

Makes about 12 balls! Enjoy these heavenly little cheesecake bites, & comment with any questions.
