I came up with this yummy gluten free pasta dish one chilly January afternoon when we didn't have much in the fridge. I took a peek in the pantry, saw pasta & artichoke bruschetta, & the rest was history! Enjoy my Artichoke Garlic Pasta recipe for yourself.
Ingredients
8 oz. atrichoke bruschetta - I like Cucina & Amore 7.9 oz. jar (gf, vegan, kosher)
12oz. box gluten free Farfalle - I like Jovial's
2 tbsp olive oil
2 tbsp ghee - swap with more olive oil if making a vegan dish!
crushed chunks of garlic - at least 6 cloves
1 tbsp garlic powder
1 tbsp sea salt
1 tbsp cracked black pepper
2 tbsp fresh parsley
2 tbsp fresh thyme
1/2 squeezed lemon juice
optional: top with grated Parmesan - soooo good!
optional: add more sea salt to taste!
The Process
start by boiling water for your pasta
cook gluten free farfalle - this takes about 9 minutes
while the farfalle is cooking, heat up the garlic with olive oil & ghee on medium heat in a sauce pan
once the garlic is browned & the farfalle is ready, add the following to the pot of garlic, ghee & olive oil that has been cooking: drained farfalle, artichoke bruschetta, garlic powder, pepper, salt
stir together for 3-5 minutes & then add in the fresh parsley & thyme
mix everything together
avoiding the seeds, squeeze the juice from your half a lemon over the pasta
mix everything together & serve!
option to top with extra sea salt & grated Parm
I adore this quick dish! And, it's super simple to make this vegan as well - swap the ghee out & don't use the Parmesan cheese. Enjoy this scrumptious comfort food! And, let me know what you think in the comments of this gluten free artichoke garlic pasta.
