Fall Fig Salad

I came up with this recipe one summer afternoon, but knew I wanted to save it for late summer as we head towards Autumn. Pears & peaches are the perfect late summer fruit, in my opinion, as they're in-season & most succulent from August through October. And, hazelnuts, a symbol of fertility/luck/magic/wisdom, always remind me of witchy treats & Fall sweets. So, here it is, the Fall Fig Salad!

Ingredients

  • 2-4 oz. prosciutto

  • 6 figs, sliced

  • 2 large sprigs fresh basil, chopped

  • 3-5 oz. arugula

  • 3 tbsp hazelnuts or pistachios

  • 1 bag Parmesan crisps

  • 1 pear or peach, sliced

  • 2 tbsp olive oil

  • juice of half a squeezed lemon

  • 1 tbsp "Everything" seasoning - I recommend Natural Grocers or Trader Joe's

  • a pinch or 2 of Celtic Sea Salt

  • optional: top with grated Parmesan, or extra nuts/figs


The Process

  • mix together your chopped basil & arugula with the olive oil & lemon juice

  • add the sea salt, sliced figs, hazelnuts/pistachios, & "Everything" seasoning into your bowl of greens, lemon juice, & olive oil - mix it all up

  • top your salad with a small handful of Parmesan crisps, 2-4 slices of prosciutto, & several slices of pears/peaches


This will feed about 2 -4 people. Enjoy & have a spooky Autumn!!
