Here's a little gluten free eggplant pizza recipe that I learned to cook up while studying abroad in Perugia, Italy. Get ready for some eggplant topped with marinara & cheesy goodness.
1 large eggplant
Aleia's Italian Breadcrumbs (gluten-free + dairy-free)
cut eggplant into round slices - cut each about 1 cm thick
place eggplant into a strainer & salt - let sit for 3-5 hours to leach out the bitter taste
after 4 hours, place eggplant in a sauce pan with olive oil, salt + pepper
cook through each eggplant slice then place on a lightly greased pan
preheat oven to 350 degrees
use a spoon to spread the desired amount of marinara sauce on top of each eggplant slice
place a mozzarella slice on top of the marinara & eggplant slices
top each slice with a sprinkle of Aleia's Italian Breadcrumbs
place in oven & cook for 15-20 minutes
cool for 5 minutes & enjoy!

Cook Time: 30-45 minutes
