Eggplant Pizza Recipe

Here's a little gluten-free recipe that I learned to cook up while studying abroad in Perugia, Italy. Get ready for some eggplant topped with marinara & cheesy goodness.


Ingredients

  • 1 large eggplant

  • marinara sauce

  • Aleia's Italian Breadcrumbs (gluten-free + dairy-free)

  • mozzarella cheese

  • sea salt

  • black pepper

  • olive oil

The Process

  • cut eggplant into round slices - cut each about 1 cm thick

  • place eggplant into a strainer & salt - let sit for 3-5 hours to leach out the bitter taste

  • after 4 hours, place eggplant in a sauce pan with olive oil, salt + pepper

  • cook through each eggplant slice then place on a lightly greased pan

  • preheat oven to 350 degrees

  • use a spoon to spread the desired amount of marinara sauce on top of each eggplant slice

  • place a mozzarella slice on top of the marinara & eggplant slices

  • top each slice with a sprinkle of Aleia's Italian Breadcrumbs

  • place in oven & cook for 15-20 minutes

  • cool for 5 minutes & enjoy!

Prep Time: 3-5 hours

Cook Time: 30-45 minutes
