Artichokes Made Easy

I don't know about you, but I love artichokes! A friend's mom showed me this simple recipe years ago, & I've adored the chokes ever since. I was always too intimidated to make artichokes as a kid, but this is artichokes made easy! A vegetable packed with potassium & vitamin C, which is known to reduce stress* levels...and, I think we could all use a little less stress in this crazy world!

Ingredients

  • artichokes

  • butter

  • olive oil

  • fresh lemon juice

  • salt & pepper


The Process

  • remove any bad leaves from the artichoke - your artichokes should be dark green in the winter & light green in the spring

  • use a knife to cut the top off, along with any sharp parts or thorns

  • boil your artichokes until the leaves easily pull off (about 1 hour)

  • just before your artichokes are almost ready, create your dipping oil with equal parts olive oil & melted butter

  • add a little lemon juice with some salt & pepper to your oil mixture - I like to add garlic powder, or even herbs sometimes!

  • let your artichokes cool then enjoy by dipping your leaves into the oil & pealing off the meat with your teeth - so good!
